A lame (pronounced lahm, from the French word for “blade”) is a long, slender tool designed to hold a razor for scoring bread dough, allowing the loaf to expand in a controlled way as it bakes. Many lames on the market are either disposable or unnecessarily expensive. For optimal performance, the blade must be extremely sharp, making a replaceable blade essential.
