Looking to eat less meat while also savoring local fall vegetables? In this class Chef Marci Lutsky will cook with fall vegetables that are available locally including cabbage, carrots and beets just to name a few.
We’ll make a tofu banh mi sandwich that will leave you not missing the meat at all alongside a roasted beet salad with goat cheese and balsamic vinaigrette. This vinaigrette will become your go-to dressing and the sandwich is perfect for a weeknight meal or lunch on the go. For dessert, we’ll lean into apple season, before pumpkin takes over, with apple cinnamon scones. You’ll come back to this scone recipe for Sunday brunch or holiday entertaining.
Menu:
Tofu Banh Mi
Roasted Beet Salad with Goat Cheese and Balsamic Vinaigrette
Apple Cinnamon Scones
